So here’s what went down last night.
After dinner (courtesy of my mom, win!), I wanted to make more zucchini banana walnut bread. I decided to give them a whirl in the form of muffins instead, and basically used the same recipe with some tweaks. I doubled the recipe, and I included 1 1/2 cup instant oats and 1/2 cup unsweetened applesauce. I baked them at 400 degrees for 25 minutes.
This is where my multitasking skills (i.e. lack of skills) failed me. I was listening to music, talking to my mom and generally not paying attention when I realized I had used tablespoons for a few things in the recipe that called for teaspoons. Oops. Too much baking soda, salt, baking powder and cinnamon went into the mix. At least I think that’s what happened. A distracted baker is not a successful baker. At this point I was in too deep to turn back. I soon learned that this error creates gigantic muffins.
But, has that ever been a bad thing?
After they cooled and sat for awhile, the size actually went down some. I was worried I had screwed up the taste… but a sampling revealed that they were still just as good. Phew. Lesson learned to pay attention while adding ingredients together!
