Weekend Highlights

Hello all!

This will be short because I am so exhausted from such a fun weekend.  This has been the longest Monday ever.

Here are the major highlights from the weekend:

Beers enjoyed on a perfect summer night in an outdoor beer garden.

A surprise visit from my best friend from school (haven’t seen her in almost two months!!).

I couldn’t have asked for a better weekend.  I love these fun weekends but it is making the summer go too fast!

Time to catch up on some sleep 😉

Baking Mishap

Does anyone have any fun plans this weekend?

So here’s what went down last night.

After dinner (courtesy of my mom, win!), I wanted to make more zucchini banana walnut bread.  I decided to give them a whirl in the form of muffins instead, and basically used the same recipe with some tweaks.  I doubled the recipe, and I included 1 1/2 cup instant oats and 1/2 cup unsweetened applesauce.  I baked them at 400 degrees for 25 minutes.

This is where my multitasking skills (i.e. lack of skills) failed me.  I was listening to music, talking to my mom and generally not paying attention when I realized I had used tablespoons for a few things in the recipe that called for teaspoons.  Oops.  Too much baking soda, salt, baking powder and cinnamon went into the mix.  At least I think that’s what happened.  A distracted baker is not a successful baker.   At this point I was in too deep to turn back.  I soon learned that this error creates gigantic muffins.

But, has that ever been a bad thing?

After they cooled and sat for awhile, the size actually went down some.  I was worried I had screwed up the taste… but a sampling revealed that they were still just as good.  Phew.  Lesson learned to pay attention while adding ingredients together!

Today’s agenda includes a workout and running some errands.  Then a kickball game tonight!

First go at it

Good afternoon!

Might as well just jump right into my first ever blog post!

This morning started with a 6 a.m. alarm to get in a workout before going into work today.  I find that the earlier I can exercise in the day, the more likely I am to actually do it.  Anytime before lunch is an ideal work out time for me.  Unfortunately, that 6 a.m. alarm was too ambitious today and I overslept a bit.  Fortunately, my dad is my boss this summer and I asked him if I could come in a little late this morning so I could still get my workout in.  He agreed 😉

Before that, breakfast needed to happen.  I know that some people enjoy working out first thing in the morning on an empty stomach, but I usually don’t have enough energy for a quality workout if I do that.  Breakfast today was my usual oatmeal beast:

 

Into the mix went:

  • 1/3 c oats
  • 3/4 c water
  • 1 scoop Wegmans Whey Chocolate Protein Powder
  • some cinnamon, vanilla extract, and Truvia for sweetening
  • topped with: 1 tbs organic creamy peanut butter, half a banana and some delicious local strawberries

Yum.  I drank my morning cup of coffee out of the “Bella” mug (I have two dogs, one is a cavalier King Charles spaniel named Bella and the other is a black lab named Louie).

Today’s workout of choice was Insanity Plyometric Cardio Circuit DVD.

 

So.  Hard.

I got the Insanity DVDs at the beginning of the summer.  I don’t follow the program, but I have enjoyed doing the videos here and there when I don’t feel like leaving the house but still want to get my ass handed to me.  Shaun T doesn’t mess around.

I love how motivating he is during the workouts (my favorite line of his is “You can FRICKIN’ do it!”) and how he encourages you to take breaks when necessary to maintain proper form and avoid injury.

After a quick shower, I headed out the door feeling satisfied that my workout for the day was done.

I’m spending the day at my dad’s office, then I have some low-key 4th of July eve plans with my boyfriend.  Can’t wait!
